End of summer or beginning of stone fruit season?

Nectarines originated in China more than 2,000 years ago. The name is a reference to “nectar” or “the food of the gods”. Did you know they developed from peaches by a natural mutation? Nectarines are nearly identical to peaches except for one gene. This results in the different textures: fuzzy versus smooth.  They can also be found growing on the same tree as peaches! Grilled Nectarines with whipped yogurt

A simple and light summer dessert! Adding Greek yogurt gives a slight tartness to balance the sweet cream, plus probiotics for an added bonus.

 

Serves: 4-6

Prep time: 5 minutes

Cook time: 5-10 minutes

 

Ingredients:

3 whole nectarines (sub peaches, plum, or other stone fruit)

1 cup heavy cream

4 tablespoons honey

½ tablespoon vanilla extract

½ teaspoon salt

1 cup Greek yogurt

Optional topping: granola, toasted nuts, chocolate 

 

Directions:

  1. Preheat a grill on medium-high heat for 15 minutes. Slice the nectarines in half, taking the pit out. Place the cut side down on the preheated grill and grill for about 5 minutes or until the nectarine is slightly soft with golden brown char marks. Flip and repeat on the other side. Once done grilling, set aside for assembly. 

  2. In a stand mixer, whip the heavy cream on high until the cream has become light and fluffy. Add the vanilla, honey, and salt to the cream mixture, whip until stiff peaks form. Slowly add in the yogurt to the cream mixture, mixing just until incorporated.

  3. To assemble, place the grilled nectarines on a serving platter and place large dollops of the yogurt cream mixture on top. Sprinkle granola, chopped nuts and/or chocolate on top for added texture and flavor.
